Why this particular wine?

Ammonite by Gaia Wines is a distinctive expression of the Assyrtiko grape from Santorini, which is produced from rare, century-old vineyards. This wine goes through an extended aging process where it rests on the lees for more than 15 months and part of the wine matures in new French oak barrels. Thanks to this careful approach, the wine has a complex profile with aromas of ripe white peaches, citrus and nuts, complemented by notes of honeycomb and pronounced minerality. The result is a full-bodied wine with high acidity, fine tannins and a long aftertaste that shows the remarkable aging potential of Assyrtiko wine and the unique terroir of Santorini.

The wine offers a rich and complex aromatic profile with notes of ripe white peach, red orange, citrus peel, and subtle notes of honeycomb, vanilla, which intertwine with an underlying quartz minerality.

Taste

On the palate, the wine is full and textured, with strong acidity and fine tannins that balance the creamy taste. Layers of stone fruit, lemon curd and hints of toasted almonds develop leading to a long, mineral finish.

Gaia Wines was founded in 1994 by Yiannis Paraskevopoulos, an agricultural expert and PhD student in oenology from the University of Bordeaux III, and Leon Karatsalos, an agricultural expert. Both founders exemplify the Greek mindset, traveling and gaining knowledge and experience that translates into their wines, aiming to offer the best possible result to all wine lovers around the world, each in their own unique way.
