The limited edition "Winemaking Techniques" will take you on a journey through traditional as well as innovative methods of wine production.
Start with the unique Sangiovese "Leonardo" 2021 from Da Vinci in Romagna , which uses the vinification method discovered by Leonardo Da Vinci. Continue to Greece with Assyrtik "Clay" from Gaia Wines , which ferments in traditional clay vessels, giving the wine a unique minerality and texture. This is followed by Grüner Veltliner Steinwerk 2023 from Domäne Wachau , vinified in marble rock, which gives it an unmistakable character and purity of expression. From the extreme environment of the Atacama desert comes Sauvignon Blanc from Viňa Ventisquero , made in concrete eggs to highlight authenticity and delicate aromas. And finally, you will enjoy Bagueri Rebula from Klet Brda from Slovenia , aged in oak barrels, which bring fullness, finesse and a complex structure.

The Leonardo method
Leonardo da Vinci's method uses soil mapping and microclimate monitoring to determine the ideal harvest time for each grape. Fermentation is tailored to each variety, controlling the temperature to enhance aromas and preserve natural flavors. Part of the wine matures on fine yeast sediments, which adds complexity to the wine.

Concrete "eggs"
In the technique of making wine from concrete eggs, specially designed egg-shaped concrete containers are used for fermentation and maturation. The unique shape supports natural convection currents during fermentation, which keep the sludge (sediment) in constant motion without mechanical intervention. This gentle blending improves texture and mouthfeel, while the porous concrete allows for micro-oxygenation, softening the wine's structure without imparting extraneous flavors unlike oak barrels.

Marble rock
Carved in the Wachau itself, the marble rock has a rare "glacial sheen" created over millions of years. The finished container weighs 4.5 tons, is 270 cm high and has a volume of approximately 700 liters. Its polished interior remains untreated, which ensures direct contact between the marble and the wine, enhancing the wine's purity and its unique mineral expression.

Clay "Amphora"
Modern clay vessels, often inspired by ancient amphorae, are used in winemaking for their porous nature, which allows a gentle exchange of oxygen during fermentation and maturation. Unlike oak wood, clay does not add flavors and allows for a pure expression of the grapes and terroir.

Oak barrel
This traditional method involves fermenting or maturing the wine in barrels made of oak wood, which subtly affects the taste and texture of the wine. The porous nature of oak wood allows controlled oxygenation, which softens tannins and increases complexity. The oak itself gives the wine smoky and spicy notes, or aromas such as vanilla or butter.

How does wine sampling work?
Our partner in Bordeaux, France uses a patented and protected filling technology that guarantees incomparable freshness and taste with every sample. The wine is filled with the addition of inert gas, without any supply of oxygen. The glass bottles are closed with an aluminum cap with a specific seal for wine, Saranex®.
What is the shelf life?
We guarantee a minimum shelf life of 12 months, unless otherwise stated for individual wines. However, as with wine in standard 0.75l bottles, it is crucial to store it in a dark place without exposure to sunlight, at temperatures between 11-14˚C. This will ensure the stability of the wine, allowing the wine to stay fresh longer and mature to its potential.
